Honey Whole Wheat Pizza

When I am in the mood for pizza but want something a bit healthier and sweet I go for this honey whole wheat pizza! It is perfectly balances with a slightly sweetened sauce and garlic crust that can hold up to the whole wheat flavor of the dough.

When it comes to the sauce you can substitute your favorite but just make it has a little bit of sugar in it. The sugar is needed to balance out the dough.

This is just a base recipe and you can customize it in so many ways. Like a pest swirl sauce, mushrooms, ham, sausage etc.

This recipe makes one 14" pizza.

Description

A healthy whole wheat pizza with a sweet honey crust and dusted in garlic powder. 

Ingredients
    Honey Whole Pizza Dough
  • 200 g Caputo Tipo 00 Flour (a strong gluten flour could be used if you can't find tipo 00 pizza flour)
  • 50 g Whole wheat flour
  • 170 g Water
  • 30 g Honey
  • 8 g Salt
  • 3 g Yeast
  • Sauce
  • 1/2 cup San Marzano tomatoes crushed (Substitute tomato sauce)
  • 1/2 tsp Sugar
  • 1/4 tsp Oregano
  • 1/4 tsp Garlic powder (plus more for dusting the crust)
  • 1/8 tsp Salt
  • Cheese
  • 1 cup Mozzarella
  • 1/2 cup Provolone (Substitute mozzarella)
Instructions
  1. Mix the dough

    Combine all ingredients in a large mixing bowl. Knead for 10 minutes or until elastic. 

  2. Resting the dough

    After kneading, lightly dust the a bowl with flour. Fold the into a bowl ,tucking in the bottom into it self. Let rest in the bowl covered for an hour or until doubled in size. 

    Once doubled, punch the dough down and form into another tight ball. Let rise another hour or until doubled. 

  3. Prepare the sauce

    Mix together the tomatoes, salt, sugar, oregano and garlic powder. Set aside until ready to use. It does not need to be cooked. 

    The sauce freezes well and you could prepare ahead of time in batches.
  4. Shape the pizza

    Flour your working area with semolina or pizza flour. Take the dough out and place onto the flour. 

    Start in the center of the dough and press with your fingertips outward. Gently pres the dough in a circle. Be careful not to pop air at the crust. 

    Gently pick the dough up my the edge and stretch to shape. Use the back of your hands to avoid piercing the dough. 

    Continue until rolled out to 14". 

  5. Assemble the pizza

    Spoon over the sauce in a circular motion. Sprinkle over the cheese evenly.

  6. Grlic coat the crust

    Lightly add olive oil or water to the crust and season with garlic powder. 

  7. Bake the pizza

    Place into into an oven preheated to 500 (450 if your oven doesn't go that high). Bake for 8 minutes or until crust is brown and cheese browned. Be careful not to burn the cheese.
