Strozzapreti are the perfect pasta shape for this simple roasted tomato sauce. Fresh cherry tomatoes create a thick and creamy sauce when roasted or sauteed. The addition of basil and garlic add to the lovely summer flavor and lighten up the dish.

Remove the stem of the tomatoes and cut in half. Place in a stainless steel skillet along with the basil. Season with olive oil, salt and pepper and mix to combine.
Place the tomatoes in a preheated oven at 400. Roast for 10-15 minutes. When they are finished the tomato juices will turn into a thick sauce.
Remove the garlic and smash the tomatoes slightly with a fork.
Place the pasta into a pot of well salted boiling water. If using fresh strozzapreti boil for 2-3 minutes.
Strain the pasta and add to the tomato sauce along with a splash of the pasta cooking water.
Toss to combine and service with a drizzle of extra virgin olive oil and Parmigiano-Reggiano.
