Strozzapreti with Roasted Tomatoes

Strozzapreti are the perfect pasta shape for this simple roasted tomato sauce. Fresh cherry tomatoes create a thick and creamy sauce when roasted or sauteed. The addition of basil and garlic add to the lovely summer flavor and lighten up the dish.

The best part is how quick and easy this is to make, making it perfect for a busy weeknight meal. From start to finish it can be done in under 30 minutes.

Description

Strozzapreti pasta tossed with  sweet oven roasted tomatoes, garlic and butter. 

Ingredients
  • 1 lb Strozzapreti pasta (Substitute your favorite pasta)
  • 1 lb Cherry tomatoes
  • 4 clove Garlic
  • 8 Basil leaves (Whole)
Instructions
  1. Prepare the tomatoes

    Remove the stem of the tomatoes and cut in half. Place in a stainless steel skillet along with the basil. Season with olive oil, salt and pepper and mix to combine. 

    If you do not have an ovenproof skillet you can use a baking sheet.
  2. Roast the tomatoes

    Place the tomatoes in a preheated oven at 400. Roast for 10-15 minutes. When they are finished the tomato juices will turn into a thick sauce. 

    Remove the garlic and smash the tomatoes slightly with a fork. 

  3. Cook the pasta

    Place the pasta into a pot of well salted boiling water. If using fresh strozzapreti boil for 2-3 minutes. 

  4. Toss together

    Strain the pasta and add to the tomato sauce along with a splash of the pasta cooking water. 

    Toss to combine and service with a drizzle of extra virgin olive oil and Parmigiano-Reggiano.
