This quick and simple avocado toast is a great weekday breakfast and comes together quickly. Sure, you cad expand on it by adding a poached egg, mushrooms etc but beauty lies in the simplicity. The slight acidic and sweet tomatoes are add a wonderful flavor.
For me, avocado needs to be served on a hearty and crisp toast. A Rye is one of my favorite breads to use, but use whatever you like best. Just no soft white bread please!

Slice the tomatoes and season with salt and freshly ground black pepper.
Cut 1 large avocado in half and carefully remove the stone. Cut and scoop the avocado into a bowl then add the juice from half a lime and season to taste.
Toast your bread and spread over the avocado and add the tomatoes.
