Italian Style Grilled Shrimp

Nothing says Italian summer food like gamberi alla griglia, or grilled shrimp. The beauty of this recipe lies in the simplicity. High quality shrimp needs nothing more than lemon and extra virgin olive oil.

If you do not have access to fresh wild shrimp, frozen can be substituted. I prefer to use shell on shrimp because the shell helps maintain quality and freshness and also makes a great stock!

This can be made indoors with a grill pan or on a traditional grill.

Description

Olive oil and lemon marinated shrimp grilled to perfection. 

Ingredients
  • 1 lb Shrimp
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lemon
Instructions
  1. Clean the shrimp

    To clean the shrimp start by removing the legs, then peel the shell off.  Once the shell is removed cut a shallow line in the back of the shrimp to remove the waste vein. 

    Save the shells for an amazing shrimp stock.
  2. Marinate the shrimp

    Juice half a lemon and mix with olive oil. Toss the shrimp and let marinate for several minutes. 

    This step cannot be done ahead of time or for too long. The lemon will start to cook the shrimp, similar to ceviche.
  3. Grill the shrimp

    Place the shrimp on an oiled grill pan and let sear for 3 minutes per side. 

    Serve with grilled lemon and parsley.
