Jalapeño Cheddar Polenta

This is a summer take on polenta that is the perfect side dish for any BBQ. The jalapeño and cheddar flavor pair beautifully with a nice grilled bone-in pork chop or chicken.

Note that polenta is the same as grits, just a different name depending on where you are from. Both are made with a coarse cornmeal. Cooking time varies amongst brands as they are all ground differently. If you prefer, there is also instant polenta that cooks in minutes!

If you want to add a charred and smoky flavor to the polenta, char the jalapeño before adding.

Description

A spicy and cheesy polenta with jalapeño and cheddar cheese. 

Ingredients
  • 1 cup Polenta (Grits)
  • 4 cup Water
  • 1 Jalapeño
  • 1 1/4 cup Cheddar cheese
  • 1 tbsp Butter
Instructions
  1. Prepare the polenta

    Bring a pot of salted water to a soft boil. Slowly whisk in the polenta and stir continually until incorporated. Turn the heat to medium low and mix every couple minutes and cover. The polenta is done when it pulls away from the side of the pot when stirred and is tender. This can take 15-30 minutes if not using instant polenta. Turn off the heat and add the diced japeño, cheese and butter. Cover and let rest for 5 minutes before serving.

    Cooking time will vary based on how course your polenta is.
