One of Pittsburgh's most iconic sandwiches is the "Pitts-Burger and Cheese" from Primanti Bros that comes with fries and coleslaw. Now you can find this type of sandwich all over the city and this is my take on a slider version. This version uses homemade whole wheat Italian bread and oven roasted french fries.
This recipe is also adaptable if you prefer a full burger and not a slider.
I like to serve 2 sliders per portion and this recipe will make 8 sliders.

Rinse and dry the potatoes. Cut into thin batons. Toss the potatoes with oil and salt then add to a preheated 425 oven on convection.
Cook for 20 minutes, flipping after 10 minutes.
Finely shred the cabbage using a mandoline. Add the salt, sugar and small pinch of celery seed. Mix and let sit for 30 minutes. Drain the released water and mix in the olive oil and apple cider vinegar.
For one pound of beef, evenly divide into 8 balls. Press down on each ball to flatten and shape. Salt and pepper both sides of the burgers.
In a large skillet add a tablespoon of oil and fry the burgers. Cook for around 4 minutes then flip.
Add a half of slice of provolone to the sliders and let cook for another 4-5 minutes.
On fresh Italian bread add the slider, french fries, coleslaw and tomato.
