Roasting sweet potatoes is a delicious alternative to baked sweet potatoes. While a baked sweet potato is wonderful and simple, it often takes a long time to bake. By slicing the potato thin it cooks much cooker, in almost no time at all. You can customize it by adding any herb and sweetner you like. I used thyme and honey in this recipe but the possibilities are endless. For example, a maple chipotle would be a unique twist!

Preheat your oven to 410
Peel potatoes. Cut into quarters and thinly slice. The size doesn't matter as much as ensuring they are roughly uniform. The thinner you slice them, them the quicker the cook but too thin you will make sweet potato fries. I like to aim for 1/4 inch thick.
Transfer cut sweet potatoes into a cookie sheet and drizzle over olive oil. Generously season with salt and pepper. Add the thyme leaves then mix.
Check after 7 minutes and flip. The bottoms should start to brown and caramelize. Cook for another 7 minutes then check on them. They will be done when both sides start to brown and are tender. Times will vary based on the thickness of your slices.
Before serving I like to drizzle with a a tbs of honey. This is optional but brings out more of the sweetness.
