This Southwest style inspired gnocchi dish is the perfect summer gnocchi recipe! Fresh ricotta gnocchi are light and pair wonderfully with fresh sweet corn, bell peppers and crispy bacon.

Carefully cut the corn off the ears of corn. Dice the bell pepper into squares.
In a cool dry pan add the slices of cut bacon. Cook on medium until crispy then add the corn and peppers. Turn the heat to medium high and cook for 5 minutes, mixing occasionally to avoid the burning.
Add the gnocchi to a simmering pot of well salted water. Boil for 3 minutes fresh or 8 minutes frozen.
Strain and add the gnocchi to the bacon, corn and pepper sauce. Toss to combine and cook for a minute.
