Cheese, tomatoes, basil and bread. What more can you ask for in a pizza. Margherita pizza is the classic, and in my opinion, best pizza. It is the essence of italian cooking, few ingredients of high quality. In this recipe we use San Marzano tomatoes for the sauce and fresh mozzarella.
One of the best things about homemade pizza is how quick you can make it. The dough can be made ahead of time and just pulled out right before baking.
There are two ways to cook the pizza. Entirely in the oven or starting on the stove in a skillet then finishing in the oven. For me, I find the stove then oven method produces the brownest crust but if you don’t have a 14″ skillet and want to cook in the oven alone, I do recommend a pizza stone.

Margherita Pizza

Prepare the pizza
Preheat your oven to 500 degrees. Crush San Marzano tomatoes in a bowl with your hands until it all the pieces are broken up. (You can use a food mill or substitute your favorite pizza sauce). Wash and dry the basil and set aside. Roll out the dough to roughly 14" then place in large skillet. Top with sauce, tear over the cheese and add basil. Drizzle with extra virgin olive oil. Place on the stove on high heat and cook for 5 minutes or until the bottom of the crust is almost fully browned. Turn the oven to Broil and place in the pizza. Broil for 2-5 minutes or until the cheese is brown.
If cooking only in the oven, cook on a pizza stone or pizza pan for around 10 minutes or until the cheese is browned.
