This refreshing watermelons salad is the perfect way to enjoy the flavors of the season. What I love about this watermelon salad is its versatility. It is easy enough for a BBQ and elegant enough for a more formal get together. I actually had a similar version at a gala! Pair this with an aperol spritz and you have the perfect aperitif!
Not all balsamic vinegar is the same, and with only a few ingredients it is important to consider your options. Cheaper balsamic vinegar that is not aged will be watery and have a sharp taste, which is best for marinades or dressing. Here we want to use an aged balsamic from Modena. You can use the best quality you can afford. A good aged balsamic will be tick, fruity, sweet, notes of raisin and well balanced. If you do not want to spend the money on an aged balsamic a balsamic glaze is a good cheaper option. It is thick and sweet, but just lacks some of the complexity.
Note the ratio of the salad isn’t too important and should be adjusted based on your preference. Some refreshing changes are to add cucumber or substitute the basil for mint.
