Making Italian dressing at home is easy, healthy and infinitely better than store bought dressings. If you ever had a house dressing at an Italian restaurant good chances are it was a version of this recipe.
For those that have been to Italy you may have been surprised to order a salad and being brought bottles of oil and vinegar to make the dressing yourself. That is because dressing culture isn’t the same. Italian dressing is pure simplicity and even has its own proverb! The saying goes a good salad needs 4 people. A judicious one for the salt, a prodigal one for the olive oil, a stingy one for the vinegar, and a patient one to toss it. Some add a 5th wealthy person to a small drizzle of balsamic vinegar.
You can certainly pour all the ingredients on the salad and toss but I find it easier to make the dressing separately and allow everyone to add their own amount. For this I think a milk frother works wonders to emulsify the dressing, but you can also shake it in a jar for around 30 seconds. The milk frother will create a better emulsification that lasts longer.
As for the serving size, this amount is good for 4 small side salads. For larger salads I would double for 4 people.

Emulsify the dressing
The easiest way to emulsify the dressing is by using a milk frother wand. Mix for a few seconds until well combined.
You could optionally put the dressing in a jar or container with a lid and shake vigorously for 30 seconds.
The dressing will stay for several days in the refrigerator but may need emulsified again.
