My favorite pie is for sure a good apple pie that is sweet, caramelly and full of cinnamon spice. Is there anything more comforting than an warm slice of apple pie with a side of vanilla bean ice cream? This is one of the first fall desserts I make and continue to make for the Holidays.

What types of apples to use for an apple pie?

This really depends on the flavor profile you are going for. I usually go for a sweet and apple packed pie. For that, I use 2 granny smiths and 4 honey crips (or a variety of honeycripst, pink lady or gala). If you want more of a tart pie use all granny smith. In addition to all granny smith, add a dash of apple cider vinegar to the pie dough to really bring out the tartness from the applies, trust me it is delicious!

Pie dough can be a pain to make and deal with. There is nothing wrong with using a store bought crust. I find that Pillsbury is almost as good as homemade and even use it myself in a pinch.

Instructions

  1. Peel and cut the apples

    Peel and cut the apples into thin slices. 

  2. Make the filling

    To the sliced apples add the sugar, flour, cinnamon and salt. Mix well to fully combine. 

  3. Make the pie dough

    Using a food processor add blitz the flour, butter, sugar and salt together to form small pea sized clumps. Add the ice water 1 tablespoon at a time. Gently knead together to form the dough. Divide into 2 and form into disks. Cover in plastic wrap and place in the fridge for 30 minutes or freezer for 15.

  4. Form the pie

    Lightly flour your work area, rolling pin and pie dough. Roll out into a circle wider than the pie pan you are using. Carefully add the curst to the pan and pat into place.

  5. Add apples

    Pour the apples into the pie. Add several sliced cuts of butter on the top. Cut the excess crust hanging over the pan. 

  6. Finish the pie

    Rollout the second piece of pie dough. Place overtop of the pie. Remove the excess dough. Crimp the edges of the dough around the edge to form a nice crust. Poke several holes in the crust to allow steam to escape. 

    The extra crust is delicious baked with cinnamon and sugar or twisted with jam in the middle!
  7. Bake the pie

    Bake in the center of a 400 degree oven for around an hour. 

    Place a foil lined cookie sheet on the rack below the pie to catch any drippings if the filling runs over or butter leaks from the crust. 

    Let cook for at least an hour before serving.
