This easy and healthy alternative to fried french fries is the perfect way to make fries at home. One of the things I do not like about making homemade fries is dealing with the oil. Not only is it unhealthy, but also makes a mess and not convenient for a weekday meal. I find you can get similar, but healthy, results by using a convection oven. Essentially, you are air frying the potatoes versus using oil.
Using a convection oven with a bit of oil will provide a crispy exterior with a fluffy inside for the fry. Best part, the can be prepared from start to finish in under 30 minutes!
What shape of fries to make? This technique will work for any shape or size, but I prefer to make square potatoes. They cook quicker and are a family favorite.
Treat this recipe as a technique and add your own seasoning to the potatoes. I often add rosemary or toss the finished fries in parmesan and truffle oil.

Slice the potatoes
Rinse and scrub the potatoes then pat dry. Cut the potatoes into your desired shape and thickness. For square fries, cut 3/4" slices then cut into squares.
Place the cut fries onto a foil lined baking sheet.

Oil and season the fries
Generously coat the fries in avocado oil and salt. Toss to thoroughly mix.
Do not overcrowd the pan as this will prevent the fries from getting crispy. -
Bake the fries
Place the potatoes into a preheated oven set to convection on 425. Bake for 15-20 minutes, flipping halfway through.
For an extra treat, toss in parmesan and truffle oil when they come out of the oven.
