This elevated version of steamed cod is the perfect summer dish. The cod is light, flaky and delicate with subtle notes of orange and champagne.

For me, this is the ultimate summer meal to enjoy al fresco. The lightness from the cod is filling without feeling like you are having a heavy protein rich meal.

Do you have to use Champagne? Of course not! A fruity Prosecco or Asti work lovely as well. It is important to use a sparkling wine that you enjoy.

A light and flaky cod steamed with champagne and orange.

  1. Steam the Cod

    In an oven safe pan or baking dish place the cod fillets on orange slices. Pour over the champagne and add the butter. Sprinkle over the parsley. Season with salt and pepper. 

    Let steam for 15 minutes or until cod has an internal temperature of 145. Spoon over champagne and serve.
