Light, flaky, buttery and delicate wild blueberry muffins are the perfect way to start your day. With muffins this good you can skip the bakery and make them at home. They really do come together quickly and are simple to make. The texture resembles that of a southern biscuit and is not too cakey. It is also not too sweet. If you do like your muffins on the sweeter side, add a bit more sugar.
This is the perfect base recipe for any muffin, simply swap out the blueberries for your favorite flavor. Chocolate chips, brown sugar swirl, banana etc are all wonderful substitutions.
Yields 12 large muffins.

Mix the muffins
Dust the blueberries with 1 tablespoon of flour and set aside.
Whisk the eggs and sugar in a medium mixing bowl. Add milk, vanilla and mix until well incorporated. Add butter and mix. Gently fold in the dry ingredients. Add blueberries and mix just to distribute the blueberries.
Add muffin liners to a muffin pan and evenly distribute. The mix should come over the top. Yields 12 muffins.
Do not overmix or the muffins will not be light and fluffy nor rise correctly. It is better to undermix than overmix. -
Bake
Bake for 5 minutes in a preheated 425 degree oven. Reduce heat to 375 and cook for another 12-15 minutes. They are done when you can touch the top and they spring back. If they sink in, cook for another minutes.
