Breadcrumb pasta is a traditional Sicilian dish called pasta ca’ muddica that is often cooked with garlic oil, anchovies or tomatoes. This version is a Thanksgiving twist that instead uses butter and the same seasoning you will find in stuffing.
Keeping with the tradition and spirit of the original dish, this is a quick budget-friendly meal that is sure to satisfy! It comes together as quick as the pasta takes to cook.
It is recommended to use fresh breadcrumbs, but if you do not have any panko is a good substitute. Italian seasoned breadcrumbs would be great in the original form, but for this recipe you want unseasoned as we are going to add the seasoning.

Thanksgiving Breadcrumb Pasta

Make the breadcrumbs
Cut a couple slices of stale bread into chunks and add to a food processor. Blitz until there are no large chunks.
Add to a dry skillet over medium heat and add the olive oil and seasonings. Cook until crispy, making sure to mix every minute.
If you do not have bread, you can substitute panko breadcrumbs. -
Boil the pasta
Cook the pasta to al dente according to the package in plenty of salted water.

Heat the butter
In a large skillet add the butter over medium-low heat. Once the butter is melted turn the heat to low to avoid browning the butter.

Toss the pasta
Add the pasta directly to the butter and increase the heat to medium. Add a splash of pasta water and cook tossing the pasta until a creamy sauce forms.
Serve with breadcrumbs sprinkled over.
